Try getting out of Manhattan. Brooklyn has some great restaurants along Avenue U from Ocean Avenue to 12 Street, and along Church Avenue from 12 Street to Bedford. Queens has some good ones in Flushing.
In the Bronx, visit the Bronx Zoo and Bronx Botanical Gardens, and Walt Whitman's home.
In Brooklyn, visit the Aquarium and Coney Island.
In Queens, the Bowne House (a stop on the underground railroad), Hall of Science and adjoining zoo where there is an aviary where you can walk at tree top level to see the birds).
Staten Island--Marchais Tibetan Museum (the only Tibetan museum in the USA), Snug Harbor, Richmondtown Restoration (a restored colonial village) and the Conference House, site of the only peace conference held during the Revolution (American commissioners included Franklin and Adams).

Well heres what I did :
See a show on broadway
Go to St. Peters church [its really old, and huge]
Shop on 5th avenue
Go to 911 site and memorial
Carriage ride around central park
Eat street food
Take the subway
Go to the heliport and go on the helicopter and see all of nyc, manhattan, etc.
Get lost. [hahah]
Climb the Empire State building.
I stayed at the Hilton hotel.
If your staying at any hotel, ask the concierege.
They know alot of other things happening around.
Edit: Oh and I went to times square, day and night.
I was beautiful! So many cabs though, hah.
first of all even if youve gone a million times broadway is the best.
but if your not into the whole theatre thing heres some other ideas:

Try a carriage ride through Central Park
At the Loeb Boathouse during the summer you can rent rowboats or take a ride in an authentic Venetian gondola.
Walk along 5th Avenue for some good. You can try Ice Skating at Rockefeller Center.
Pick up a free copy of The Village Voice in the newspaper boxes on many street corners. That will give you a guide of what is going on during the time you are here.
Go see The Lion King on Broadway! I heard that was really good.
